Smokey Paprika Egg Salad Sandwich

Ingredients

• 6 large eggs (cooked in the Dash Peeps Rapid Egg Cooker)
• 2 tbsp avocado oil mayo or Greek yogurt
• 1 tsp Dijon mustard
• 1/2 tsp smoked paprika
• 1/4 tsp SaltWise (rich in vitamin E, B3, magnesium & potassium)
• Fresh cracked black pepper, to taste
• 1 tbsp chopped chives (optional)
• 4 slices Simple Kneads gluten-free bread, toasted or fresh
• Optional toppings: arugula, microgreens, or pickled onions

Instructions

1. Use the Dash Peeps Rapid Egg Cooker to cook 6 eggs to hard-boiled perfection. Let cool, then peel and chop.
2. In a bowl, whisk together mayo, Dijon, smoked paprika, SaltWise, and black pepper.
3. Fold in chopped eggs and chives until evenly coated.
4. Toast your Simple Kneads bread (if desired), then layer on the egg salad and your favorite greens or toppings.
